I wonder if I falled in love with this job the day that my dad, asked me if I could look after his bar for the afternoon, with my grandma in the back bar to check that everything was fine with me. I was nine years old. I didn’t know what I was doing, but I knew a thing… I was feeling good behind that bar.

Since then I pretty much always work in the hospitality environment, did the catering school, studied as cocktail barman in Brescia and Milan and worked in Italy and abroad in Ireland, England, Spain and Australia starting as a barback going up all the way to Bar Manager, writing and designing my own cocktail menu and recipes, and feeling endlessly the same passion I felt that first day I went behind a bar.

The drinks are something very important for me, they are an experience, a trip in the world of the taste, smell, emotions, and I like to play with drinks, getting inspired by music, by colours or simply by a guest and creating a drink that rappresent this person, giving a shape to the taste, shaking what my guests communicate to me. Everything in the bar is about the guest, the bar biggest treasure.

I rather serve a glass of tap water with a smile than the best cocktail in the world with a sad face.
